Ingredients:

 2 cups of bread flour (250g)

  1 cup of sugar ½ (300g)

  Baking Soda (Baking Soda) 1 tbsp

  Baking Powder 2 tbsp

  Cinnamon Powder 2 tbsp

  3 large eggs at room temperature

  Vegetable Oil 235ml

  Pumpkin Puree 425g (Instead of pumpkin puree you can use steamed and well blended pumpkin)


  Ingredients for icing:

  225g of cream cheese at room temperature

  Unsalted Butter 115g

  200g of icing sugar

  Vanilla 2 tbsp


  How to make:

  How to make a cake:

  First add a little baking soda, baking powder and cinnamon powder, mix well, sift through a sieve and place in a bowl.

  Add a little sugar and stir.

  Now put the eggs, vegetable oil and pumpkin puree in another bowl and whisk until well combined.

  Then add the pumpkin mixture to the pre-mixed flour mixture and whisk well until a smooth mixture is obtained.

  Then fill a buttered 9 x 13 inch large cake tin with the cake mixture and bake in a preheated oven at 180 ° C / 350 ° F for 30-40 minutes.

  Now let the cake dry in the cake tin itself.

  In the meantime, make the icing.  (Once the icing is done, refrigerate the cake until it is dry, but leave it outside at room temperature before putting the cake on top.)


  How to make icing:

  Add cream cheese, unsalted butter, vanilla with icing sugar and mix well until soft and creamy.

  Finally, after the cake is completely browned, put the icing on top and decorate as you like.


  important:

  You can also use corn oil or extra light olive oil instead of vegetable oil.

  Do not forget to remove the eggs as well as the crunchy cheese from the fridge and use it when it reaches room temperature.

  When making the cake and icing, toss with one hand.  Stir.  Beat.

  Let the cake dry completely and add the icing at the end, otherwise the icing will melt and escape along the cake.
