Ingredients:
500g of bread flour
Teaspoons of salt
Instant dry yeast 4 tbsp
200g of sugar
1 cup of lukewarm water
1 small cup of condensed coconut milk (about 235ml)
2 grated coconuts
2 small cups of honey (about 500ml)
200g of dates
50g of raisins / raisins
75g of cashews
Teaspoons of crushed cardamom cardamom
Teaspoons of nutmeg powder
1/8 teaspoon of crushed cloves
Cinnamon powder tbsp
How to make:
First add about 2 teaspoons of 150 grams of sugar to a cup of lukewarm water and dissolve well.
Then add some yeast and mix well. Set aside for about 10 minutes.
Then add salt to the bread flour, sift through a sieve, add the melted yeast and condensed coconut milk, knead well and knead into a dough. (Add a little water if desired and knead into a loaf mixture.)
Now knead the dough and leave it to rise for about 1 hour.
Meanwhile, place a pot on the stove and add honey, remaining sugar, grated coconut, dates, raisins / raisins, cashews, cardamom / cardamom powder, nutmeg powder, cloves powder and cinnamon powder to make sweet coconut. Extinguish.
Once the sweet coconut mixture is dry, add the flour mixture and mix well.
Then place the bibikkan mixture on a greased baking sheet and let it simmer for about an hour.
Finally bake in a preheated oven at 160 ° C / 320 F for 1 - 1.
important:
Here you can use either coconut honey, sugar honey or kithul honey as honey.
It can also be steamed without baking. (The boiling time varies depending on the size, length, width and height / thickness of the pan on which you put the Bibikkan mixture.
